Easy Yogurt Recipes You Will Fall For

Try these simple and quick recipes made with Purabi curd and forget artificial desserts. Enjoy!

Quick Srikhand

Ingredients

  • Purabi Curd- 1 kg
  • Saffron (kesar)- large pinch
  • Sugar powder/ sugar substitute- 1/3 cup
  • Purabi milk- 2 Tablespoon
  • Nutmeg powder a pinch
  • Green cardamom powder- 1/4 teaspoon
  • Almonds blanched, peeled and sliced-  5-6
  • Pistachios blanched, peeled and sliced 8-10

Method

  • Tie the yogurt in a piece of muslin and hang it overnight over a bowl, in a refrigerator, to drain.
  • Transfer the drained yogurt into a bowl. Add the sugar substitute and mix well.
  • Soak the saffron in warm milk, cool and add to the yogurt mixture. Mix well.
  • Add the nutmeg powder and cardamom powder; mix well and chill in the refrigerator.
  • Serve chilled, decorated with the almonds and pistachios.

 

Mixed Fruit Parfait

Ingredients

  • Pomegranate juice/ mixed fruit juice- 1 tin
  • Purabi Curd - 1 cup
  • Sugar- 1 1/2 tsp
  • Mint leaves- few
  • Mixed fresh fruits: apple, grapes, kiwi, pineapple (peeled and chopped)
  • Vanilla ice cream 2 scoops
  • Pistachios for garnish

Method:

  • Add juice, curd, sugar and mint in a blender.
  • Take it out in a bowl and whisk until it become fluffy.
  • In refrigerate Keep it aside
  • Add the mixed fruits to the serving glass and pour over the mixture.
  • Top it with vanilla ice cream and garnish with pistachios.

How to make it: Berries, peaches, plums, melon, mango, papaya, there are just no limits to how creative you can be in adding fruits to your yogurt!  Use what you have or what’s seasonal, top with sugar or drizzle some honey/ maple syrup and there you are.
